MARIE AUDRAN: How did Christian Dior’s vision inspire you? MAURO COLAGRECO: The first thing that captivated me was our shared love of nature and the reverence we have for gardens as places of renewal and inspiration. It was this deep connection that made me immediately want to immerse myself in the history of the House and in Monsieur Dior’s vision. I was moved to discover his curiosity and passion for the connections and interactions that operate within our universe. He was a man who had the courage to make room for mystery in his research. I deeply appreciate and honour that. MC: Creativity, constantly surpassing yourself, the sublimation of nature, sharing. I would have loved to have met him and talked to him; I’m sure we would have spent hours in the garden. Today, I’m delighted to pay tribute to him with our desserts and cocktails. The worlds of haute couture and haute gastronomy are so close. MC: The rhythm of the garden and respect for nature’s cycles are the basis of my cuisine. These are the values and philosophy that shape our work. This has allowed us to create a real dialogue between the emblematic elements of the House of Dior and our five hectares of permaculture and biodynamic gardens. In biodynamics, we believe that the cosmos influences living things, that the moon and the planets affect the growth of plants. You can imagine how happy I was to discover that Monsieur Dior also believed in some kind of cosmic influence. Each creation has its own identity and presents a miracle of nature; it can be an insect with the bee, or flowers such as marigolds, which are very present in Thai culture. It was an obvious choice to give it a place of honour. One of our pastries is shaped like that flamboyant flower, and we add mango, passion fruit and pistachio flavours. A real delicacy! |
